It's October!

And it definitely feels like Fall around here.
 


To celebrate, I made Apple Pie - Crumb Cake Muffins for breakfast.
Here's my recipe (adapted from Vegan With a Vengeance)-
 
 
 
For muffins:
1 1/2 cups flour
1/4 cup plus 2 Tbsp sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp nutmeg
1/4 tsp salt
3/4 orange juice
1/3 applesauce
1 tsp vanilla extract
1/2 cup grated apple
1/2 cup chopped apple (1/4-inch pieces)
 
For topping:
1/4 cup all-purpose fluor
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground allspice
3 tbsp olive oil
 
Directions:
1. Prepare the topping by mixing all the dry topping ingredients together in a small bowl. Drizzle the oil in while mixing with your fingertips until crumbs form. Set aside.
2. Preheat oven to 375 degrees F. Lightly grease a twelve-muffin tin.
3. In a large mixing bowl, mix together the flour, sugar, baking powder, baking soda, spices, and salt. Create a well in the center of the mixture and add the orange juice, applesauce, and vanilla. Mix, then stir-in the grated and chopped apple.
4. Fill each muffin cup two-thirds full. Sprinkle the crumb topping over each muffin. Bake for about 22 minutes.
