Cupcakes!




I made cupcakes today!
They're strawberry cupcakes, with either strawberry (pink) or caramel (brown) icing. I ended up putting the kiwi slices on top because, well, to be honest the caramel-iced cupcakes really didn't look too appetizing!
The best part is, they're 100% vegan! I was especially surprised that the caramel icing was vegan, but by-golly, it is! The strawberry cake-mix and strawberry icing are both Duncan Hines, and both are vegan. Very cool. Plus, instead of vegetable oil, I used a mashed banana. Extra delicious.

  1. Hey there! I just traveled on over here from the Etsy forums, and I looove cupcakes. I'm not vegan but the cake I make from scratch that everybody loves the most is vegan chocolate cake! Nobody would ever know there weren't eggs or butter. (though I do make buttercream icing...so much for being totally vegan there)

    I didn't know you could use banana instead of veg oil! Do you know if it's always interchangeable, or if it only works in certain recipes?

    Yes, bananas can always be used (in baking) to replace oil! I used an over-ripe banana (like you would use if you were making banana nut bread), and you can also use applesauce, yogurt (regular or vegan), or any other fruit puree.

    Substitutions should be made in equal proportions, for example: 1/4 cup of oil should be replaced with 1/4 cup of mashed banana/applesauce/etc.

    So much healthier, whether you're vegan or not! :)
